Dressing Up Dessert and a Special Announcement

Banana Raspberry Taco

At Chez Alfa, we always have dessert. But it rarely requires more work than opening the fridge and pulling out some fruit.

It would hardly be fitting to hand a guest a plastic spoon and a pudding cup, and tell them to eat up. So, I have a few easy dessert recipes that don’t require baking; don’t use fakey foods; and don’t take a lot of time to prepare, yet still look like something special.

Here’s one of those recipes. You can do most of the work ahead of time, and serve it either warm or at room temperature. The fruit mixture is also great over ice cream or Greek yogurt.

Banana Raspberry Tacos
(Serves 3)

2 tsp. butter
1 tbsp. brown sugar
2 ripe bananas, cut into 1/4 inch slices
1/2 cup raspberries
1/4 cup orange juice
Shot of rum (I used banana rum for extra flavor)
3 small flour tortillas
Chocolate sauce of your choice (optional)
Flaked coconut (optional)


  1. In a medium nonstick skillet over med-low heat, melt the butter and sugar together. Stir constantly.
  2. Add the bananas, stir to coat with the sugar sauce, and saute for about 1 minute — just until bananas begin to soften.
  3. Add raspberries and stir to combine. Immediately add orange juice, and mix thoroughly but gently to avoid breaking up the raspberries.
  4. Add the shot of rum, and lower heat to low. Simmer for 1-2 minutes to cook off some of the alcohol taste.
  5. Meanwhile, warm the tortillas using your favorite method. I usually wrap them in a damp paper towel and throw them in the microwave for 1 minute.
  6. Place one tortilla on a plate and divide up the fruit mixture evenly. Save a little for topping, if you want to really dress things up.
  7. Fold the tortilla over the filling taco style. Drizzle on some chocolate syrup, add a little flaked coconut, and a little of the fruit and syrup from the pan. If you really want to go wild, add some whipped cream, too.
