Summer Re-runs

I’m heading out on vacation for the next 10ish days, so you’re on your own. Clean up after yourselves and don’t do anything I wouldn’t do!

New episodes of Gayle Made will resume on May 11.  While I’m gone, be sure to try this oldie but goodie.

Ginger-Wasabi Crockpot Beef

Top round or flank steak (about 2 lbs)
1 large yellow onion, sliced thin
1 cup of sweet BBQ sauce (nothing really smoky-tasting; you can substitute Hoisin Sauce)
3-4 tbsp Rice wine vinegar
1/2 cup Sake (I used plum sake)
1/4 cup low sodium teriyaki sauce
2 tbps. chopped ginger
2 tbsps. chopped garlic
2 tbsps. wasabi paste
Splash of dark sesame oil

Directions

  1. Add onions and then beef to the crockpot.
  2. Mix together the rest of the ingredients and pour over the beef.
  3. Cook on high 4 hrs or low 6 hrs.
  4. Shred meat with two forks, then return to sauce. Add 2 tbsps of quick cooking tapioca, and let go another 20-30 minutes, so sauce thickens.

**Note: The flank steak shreds really easily; the top round takes more work. Alternately, you can slice the top round and spare yourself the torture of shredding it.
